Today started again with some Matt's Coffee made in my trusty two cup french press...
then it was time for
Breakfast.

After breakfast we did a little tidying up in preparation for our newspaper interview. The time flew by as I realized that daylight savings happened and that was partly to blame for the quickly disappearing morning, luckily Rachel from the newspaper was also tripped up a bit by the clocks and pushed everything back an hour ! The interview went very well, she asked us many questions regarding our "green" ways as well as information about Clay Hill Farm and the green wedding contest . It is always nice when you feel like your chatting with a friend instead of being interviewed and Rachel's demeanor put Cassi and I at ease from the get go. We look forward to seeing the story and will let you know when it hits the streets!
From there Cassi needed to get ready for work and I decided we needed a little snack so she doesn't go hungry during her night shift. I was steaming the last of our Freedom Farm golden beets all morning so I decided it should be something without bread and utilizing the beets... this is what I came up with!

all morning? how long exactly did you steam them for??
