Day 25 Local Eating Community Giveback

Breakfast
2 Eggs Scrambled
Parmesan Cheese and Buttermilk Toast

Lunch
Blueberry Swallowtail Yogurt 
w/ Maple Syrup

Curry Tofu Saag
w/ Cucumber Salad




A wonderful indian inspired dinner that used up some Spinach I had piling up as well as some tofu I planned on using the evening prior... the recipe is simple... In the food processor I threw in a few cloves of garlic and a shallot... into a pan with some 2tbsp raw butter and 2tbsp maine mustard oil... cube up the tofu and toss lightly with sunflower oil and curry powder... we use the one we got from the Commonground Fair.... put that in the oven under 450˚ until it slightly browns...then, toss in skillet  with about a pound of chopped fresh spinach.  Let simmer on medium for 10-15minutes turning to low after 5min...
 On the side we had a simple sliced cucumber salad with cucumbers that we were excited to see at the Olivia's Garden table at the Winter Farmer's Market tossed with some raw vinegar from Ricker Hill & some Maine sea salt & Maine honey- Yum!

Day 174 LocalrootZ Project (June 25, 2010)

Snow Peas & Heiwa Tofu Stir Fry
w/ Middle East Bread 


So Friday has come and we strayed a bit with the bread... but its fresh and delivered just as I leave work... it made fresh locally and delivered in a pickup truck.  Anyway this meal is so good and quick and easy...cant wait for our own snow peas to come in so we can do this meal from the garden ! Soon Come.  Hint on cooking this awesome local tofu... toss it in one of the three wonderful Maine Oils Canola, Mustard or Sunflower... put it n a pan under 425˚ for about 15 minutes flipping a few time in the process... then add it to your steaming stir fry with a tablespoon of butter some sea salt and a dash of seaweed powder to add a rounder saltiness...mmmmm

Thursday is here and a quick dinner was in the itinerary with Cassi and I only having an hour in between me getting home from work and her leaving... Quick and easy tofu and greens !  If your not familiar with my source for local tofu get familiar by visiting them @ Heiwa Tofu ! I made quite a bit of progress today on the garden plot... up at 4:15 in the morning with the soil in my fingers by 5am.. I was able to get all the seedlings out of the coldframe on the rooftop and into the ground !  Very satisfying to have the garden plot all planted and ready to feed us... more pics to come !
