LOCALROOTZ FERMENTZ OFFERINGS 2024
BIRCHTONIC
(4% abv - 500ml - 2021 Vintage)
A unique elixir concocted of a blend of fresh birch sap and our own maple syrup, steeped with birch polypore mushroom, hemlock tips and mandarin slices. Wild inoculation overnight in the cool spring air and then fermented in glass for 8 months before bottling. 4/ bottles remain.
(Crisp Tart and Refreshing with a touch of sparkle.)
CIDERSAP
(5% abv - 750ml - 2021 vintage)
A blend of fresh birch sap, maple syrup and a fraction of the previous years cider & lees aged in glass for 18months with a touch of fresh squeezed mandarins and overwintered thyme from the herb garden. 3/ bottles remain.
(Crisp and tangy with a rustic maple sweetness to balance the bright acidity.)
CUMBERLAND CIDER PROJECT 2022
(6.2% abv - 750ml - 2022 vintage)
A blend of heirloom apples sourced through Cumberland County and aged 18 months in glass before bottling. 10/ bottles remain.
(Rustic cider with a gentle tannin and balanced bitterness.)
PRESSED STILLNESS
(5% abv - 750ml - 2022)
A gentle apple wine comprised of heirloom apples, pressed then aged gracefully in glass for 24 months. 5/ bottles remain.
(Mellow and soft, touched of floral bitterness and whispered complexity.)
PRESSED STILLOAK
(5% abv - 750ml - 2022)
The same gentle apple wine base as "Pressed Stillness" but racked off into a smaller glass carboy and aged the last 6 months on toasted oak chips from a winter storm damaged limb off one of our beloved oak trees. 0/ bottles remain.
(Mellow and soft but with a touch more rustic smoked kissed vanilla undertones.)
NATIVE BLUE
(6.5% abv - 750ml - 2021)
A natural blueberry wine made with 100% Organic Wild Blueberries gifted by old time blueberry legend and Maine food activist Arthur Harvey. Pressed by handwringing through cheesecloth then aged on the fruit in 5 gallon buckets for 1 month with weekly punchdowns, then racked into glass carboy and fermented and aged for 24 months before bottling. 3/ bottles remain.
(Fresh light vibrant blueberry essence with earthy structure on the nose and finish.)
BLUE DAWN (cuvee 01)
(6.5% abv - 750ml - 2022)
A unique blend/cuvee of 2021 Cumberland Cider and Native Blue. 8/ bottles remain.
(Tart, funky with bright tones of apple and blueberry skins.)
BLUE DUSK (cuvee 02)
(7% abv - 750ml - 2022)
A unique blend/cuvee of 2021 Cumberland Cider and Native Blue. 2/ bottles remain.

MAPLE & OAK
(15% abv - 375ml - 2016)
Made with 100% Maple Sap boiled down over an open wood fire then lautered through the boughs of spruce, pine and hemlock, air cooled overnight in the crisp spring air with the addition of fresh sliced of tangelos and overwintered lemon thyme. Aged in glass for 2 years then "dry-beaned" for 48hrs on Small Axe Ethiopian coffee beans before bottling. 6 bottles

THESE ELIXERS, WINES AND CIDERS ARE NATURALLY FERMENTED USING ALL INGREDIENTS SOURCED FROM THE LOCALROOTZ HOMESTEAD OR LOCAL ORCHARDS & FIELDS. (any exceptions are in italics)
