Day 048 LocalrootZ Project (February 17, 2010)

Arugula & Goat Cheese Omelet

 Leftover Pan Fried Cod Parmesan

Today was a back to work day for Cassi so something quick and easy was on the itinerary... with some leftover cod from last night I went to work with some old Olivia's garden cocktail tomatoes into a pot for a quick sauce... add to the mix some newly restocked garlic (thanks to Dean from Mother Oven Bread) and presto... Tomato sauce ladled over yesterdays cod, shred some Tourmaline Farm goat mozzarella and a touch of  Echo Ridge Romano, bake for 15 min @ 325˚ along with a little Aroostook Wheat garlic bread, a wonderful "American-Italian" style meal to add to the 100% local recipe 
catalog !
