Cassi loved last Fridays dinner so much that I had to replicate it and what better day than Friday to do it again .  We didn't have left over haddock like we did last time so I added some of the shittake mushroom for a little more body to the dish.  The fresh cilantro from the cold frame makes the perfect compliment.

Day 117 LocalrootZ Project (April 28, 2010)

We are absolutely loving these tomatoes !  Todays dinner was amazing... I found a special combination that is one I need to share...
All Local Ingredients; Cornmeal, Thyme, Savory, Haddock, Cherry Tomatoes, Green Garlic, Red Onion, Lovage, Spinach, Mozzarella and an Egg.

It was quite easy and probably took a total of an hour, with most of that time spent waiting on the tomato sauce.  It started with me coating the haddock in egg then cornmeal/herb combination and slapping it onto a pan of hot butter.  As that sizzled to a crispy brown crust... I cut up the tomatoes from Olivia's Garden and squeezed out the seeds... adding them to a mixture of sauteed green garlic and onions. With the sauce pot full and the tomatoes cooking down into a sauce I added a cup or so of finely chopped lovage... that is the combination I as talking about ! Mmmmmm lovage is so good in a tomato sauce.  Anyhow... from there its the simple lay the pan fried fish in a glass pan... ladle your finished sauce over the top then grate a nice ball of Swallowtail Farm mozzarella.  Bake for about 25 minutes at 375˚ and presto.  Paired with some fresh baby spinach chopped into strips and sprinkled with some sea salt to finish off the dish.

Today was a sad day... Dean from Mother Oven made his last bread delivery.  He is moving on to become more of a bread making guru and less of a slave to his dedicated bread baking methods. He always had consistent results that proved just how good our local grains could taste !  I hope one day to link back up with Dean and build my own oven and learn the ancient bread making techniques that Mother Oven brought to our tables.  Thanks Dean



Todays dinner was a celebration of bread... spread with a layer of caldwell butter on the outside and my home made pesto on the other.  A handful of Sonnental Aroostook Mild Cheddar grilled on the cast iron... and a side salad.

I have stocked up my freezer with 8 various types of Mother Oven bread and will use it with care as long as supplies allow !

Monday... monday ! We had some halibut I had purchased from the Port Clyde CSF on Saturday and I supplemented that with a half pound of bay scallops that I snagged at Free Range Fish during my commute home... excited Olivia's Garden is dropping a new crop of beauties right in time for all these yummy spring greens !

We had a surprise visit from the one and only Mr. Estes.  He is a fellow 2001 painting graduate from MECA, so we go back till... I guess 1998.  Anyhow he blew in off 95 on his way up to Brewer from Worcester.  We decided to take the opportunity to feed him and become musically entertained by his newest creations of cigar box guitars while relaxing on the deck!

I could write about Brian's talents but instead I will just show you a bit of what he has been up to outside of being a wonderful art teacher and friend...

My standard early morning hold me over.... then my weekly kitchen assessment where I go through the cabinets and fridge and make sure I know everything I already have before stepping over to the Winter Farmers Market.  I should mention this was the last week @ the Free st. location for this year... lets hope and encourage they keep it going for years to come !  Anyhow have no fear they (the farmers) will be down in Deering Oaks starting on Saturday morning and some of them are starting to already trickle in on Wednesday in Monument Square...

Ok ok so we strayed from a 100% local meal today... but hear me out...we have been getting this bread in at my work that is from the Star East Cafe over on Forest Ave.  Yes its locally made but no not with local flour... I decided to surprise Cassi with a little treat... so I brought home a warm bag fresh off the truck in order to celebrate that it was Friday... other than that the curry powered was in the cupboard from 2009 so I had stated it is fair game and I complemented the dinner with 2 Vermont tomatoes... Olivia's should be dropping cocktails soon...  The meal was amazing with the addition of some green garlic, onion, leftover cod and a handful of cilantro... cut fresh from the cold frame.  Drizzled with a bit of swallowtail yogurt to add a little tang and BOOM a 95% local Indian treat... we deserved it !

Never got a final photo of this meal... we had a friend Eric over for dinner and followed his vegan diet in the menu.  I marinated Lalibella Tempeh in cider syrup, cider vinegar and green garlic... then after browning it up in sunflower oil, I tossed it with some wilted swiss chard and sorrel.  Where did the green garlic and sorrel come from? Well, the Wednesday Farmers Market in Monument Square thats where !

I was very excited to get some locally cultivated shiitakes that had been grown at Noble Mushroom Farm in Gardiner. It seems he is ramping up production this year and promised me a few pounds every Monday.  Wonderful... I really enjoy having a nice fresh mushroom to add a little texture and flavor to a bowl full of greens.  These ones were amazing and I am very much looking forward to many more shiitake infused meals to come !
