Day 070 LocalrootZ Project (March 11, 2010)

This was a dinner to get me back into the swing of things... the last few days have seen a slight rest in the kitchen, but today I was feeling a bit more energized to create a tasty dish.  It started with soaking some dried ancho peppers & yellow eye beans for a day prior.... with that started it was a quick preparation after returning home from a windy work commute, that had me swinging by Free Range Fish Market to pick up a fresh pound of maine shrimp.  Upon returning home I buttered up the cast iron pan and added copious amounts of stuttgarter onions and german hardy garlic (remaining pretty hardy in storage considering we are in March!) and the sliced up portions of 4 ancho peppers re hydrated to their original pobalno stage.  After a few minutes I added in the beans & shrimp meat with a sprinkle of powdered chili shut off oven covered and let stand 5 minutes.  Toss with some fresh finely chopped winter spinach and you have a full belly and satisfying new recipe !
