This was actually my first time "frying" fish.  It was a delicious change to the usual way we prepare fish and it offered a new option that will stay in the rotation as the days go by.... Here's how it worked, find a good cheap whitefish, we chose Pollack which is a highly sustainable fish caught in the Gulf of Maine in high abundance and the market price was 2.99/ # I took the fish and  dropped it in a mixture of one large beaten egg covering the fish liberally.... then in another container spread about 1 cup of cornmeal (I then used a frozen heal of Spelt bread and with my cheese grater grated the bread into the cornmeal optional).  Transfer the fish from the egg mixture into the cornmeal mixture covering the fish on both sides.  Then simply transfer the fish onto a frying pan with a small layer of butter/oil to coat the pan.  You know it is done when the fish starts to break apart.  Place on paper towel to suck up excess oil and serve !
